It depends on your goals. If you want more hypertrophy, you should alternate. If you want better endurance, don’t alternate.
When you do a body part all at once, you will be tired in the later sets. Form may suffer and weight may decrease. You will be drawing more energy from your cardiovascular system in low weight and long lasting situations.
If you alternate body parts, you allow the first body part to rest while working on the second. Plus, there’s extra time switching between the two. This, more likely, allows you to keep the same weight and good form. Heavy weight for short periods of time is best for hypertrophy.
